Ingredients1 + 3/4 cup spelt flour 2 teaspoons baking powder 1 teaspoon baking soda 1/3 cup diced dates 1/3 cup chopped walnuts 1 teaspoon cinnamon ½ teaspoon salt 3 large ripe bananas 1/3 cup liquid coconut oil ¼ cup All Good Oat Milk 1 teaspoon vanilla extract 1 tablespoon maple syrup 1 banana, halved longways (for topping)

MethodPreheat oven to 170c on bake. In a large bowl, combine flour, baking powder, baking soda, chopped dates, walnuts, cinnamon & salt. In another bowl, mash bananas. Add liquid coconut oil, oat milk, vanilla & maple syrup to mashed bananas and mix. Add wet ingredients to dry and combine, careful not to over mix. Transfer batter to a baking paper lined loaf tin, and place halved banana on top with cut side up. Bake for 50-60 minutes, until cooked through. Allow to cool in tin for 10 minutes, then remove from tin and place on cooling rack for 20 minutes. Slice and serve fresh with coconut yoghurt, berries & nut butter. |
