105g plain flour
45g @veganutco Vanilla Dream Protein Powder
1.5 tsp baking powder
3/4 tsp salt
90g coconut oil, melted
45g All Good banana, pureed
150g brown sugar
70g-100g dark vegan chocolate, chopped
Sea salt for sprinkling on top (optional but HIGHLY recommended)
Preheat your oven to 180ºC.
Combine the melted coconut oil, pureed banana and brown sugar in a bowl and mix together.
Add the flour, protein powder, baking powder and salt and mix until fully incorporated, then fold in your chocolate. You may want to refrigerate the dough for 30 mins if it is too soft to handle.
Shape the dough into 8-10 cookies on a lined baking tray and bake for 12-14 minutes or until golden on the edges.
Sprinkle with sea salt and enjoy warm with your favourite dairy free yoghurt or ice cream, or on their own as a delicious treat!
